Gronku joined the UNLV NCAA football squad after impressing the coaching staff at trainign camp. Because he had both size and speed, Gronku chose to play Tight End, despite having no experience at that position. He rarely suited up for his freshman and sophomore seasons, finally seeing his first start in his junior season due to injuries to 2 tight ends higher than him on the depth chart. He caught one pass in that game and then only suited up sporadically after that, finally scoring his first touchdown late in his third season. As a senior, he became a regular starter, appearing in every game. He managed to score 4 touchdowns and his best game was 5 catches for 50 yards. He graduated after his 4th season, earning a Bacehlor's degree in Economics. Praised by his coaches for his team-first attitude and work ethic, he nonetheless was not drafted into the NFL. He had secured a tryout with the Winnipeg Blue Bombers of the Canadian Football League, but due to covid concerns, that league was shut down for the season. Instead, he chose to declare himself eligible for the DSFL Draft at the trade deadline in Season 27.
